Ingredients
Scale
Bread and Toppings
- 1 (6-8 inch loaf) French bread, cut into ½-inch slices
- 3 cups rainbow mix cherry tomatoes
- ½ cup chopped fresh basil
- 1 cup chopped fresh strawberries
- 1 cup fresh blueberries
- 1 cup fresh raspberries
Cheese Mixture
- 10 ounces goat cheese
- 8 ounces low-fat cream cheese (1 brick)
- 1 teaspoon garlic powder (omit if making triple berry variation)
Balsamic Glaze
- 1 cup balsamic vinegar
- ¼ cup granulated sugar
Instructions
- Preheat Oven: Preheat the oven to 350°F to prepare for toasting the bread and roasting the tomatoes.
- Toast Bread and Tomatoes: Arrange the French bread slices and cherry tomatoes on a baking sheet. Bake for 10-12 minutes until the bread is toasted and the tomatoes have burst. Remove from oven and set aside.
- Prepare Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and granulated sugar. Bring to a boil, then reduce to a simmer and cook for 6-8 minutes until the mixture reduces by about one-third and becomes syrupy but not too thick.
- Whip Cheese Mixture: Using a high-powered blender or stand mixer, combine the goat cheese, low-fat cream cheese, and garlic powder (omit garlic powder if making the triple berry variation). Blend until the mixture is fully combined and smooth.
- Assemble Bruschetta: Spread a generous layer of the whipped cheese mixture onto each toasted bread slice. Top with the roasted cherry tomatoes, then add the fresh basil and mixed berries as desired. Drizzle with the balsamic glaze before serving.
Notes
- For a sweeter, fruit-forward variation, omit the garlic powder in the cheese mixture to highlight the berries’ flavor.
- You can grill the bread slices instead of baking for a smoky flavor.
- Ensure the balsamic glaze is syrupy but not too thick to easily drizzle over the bruschetta.
- Use fresh, ripe berries and cherry tomatoes for the best flavor and presentation.
- Leftovers can be stored separately in airtight containers; assemble just before serving to maintain bread crispness.
