Instructions

  1. Prepare the Watermelon: Cut the watermelon into small, bite-sized cubes and place them in a large salad bowl, forming the base of the salad.
  2. Add Cheese and Mint: Crumble or cube the feta cheese and add it on top of the watermelon. Chop the fresh mint leaves and sprinkle over the salad. Add sliced red onion if using for extra texture and flavor.
  3. Make Balsamic Glaze: Combine balsamic vinegar and honey in a small saucepan. Heat over medium heat, stirring occasionally until it thickens to a syrup-like consistency, about 5-7 minutes. Remove from heat and let it cool before using.
