  • 4 cups vegetable or chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme


Instructions

  1. Sauté Vegetables: Heat olive oil in a large pot over medium-high heat. Add diced onion, carrots, and celery, and sauté for about 5 minutes until the vegetables begin to soften.
  2. Add Garlic and Potatoes: Stir in the minced garlic and cook for 1 minute until fragrant. Add halved baby potatoes, 1/2 teaspoon salt, dried thyme, and the broth. Cover the pot and bring to a boil, then reduce the heat to medium and simmer, covered, for 10 minutes.
  3. Prepare Dumpling Dough: While the soup simmers, combine flour, baking powder, 3/4 teaspoon salt, and dried thyme in a bowl and mix well. Pour in the milk and melted butter over the dry ingredients and gently stir with a spatula until just combined. Do not overmix to keep dumplings light and fluffy. Divide the dough into 15-16 even pieces.
  4. Add Peas and Dumplings: After the initial simmer, stir frozen peas into the soup. Spoon dumplings evenly over the surface of the soup, spreading them out so they have space to puff up. Cover the pot and cook for 15 minutes without lifting the lid, until dumplings are cooked through and a toothpick inserted into a dumpling comes out clean.
