Marinated Chicken:
- 1 1/2 pounds boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon oregano
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- juice of 1 lime
Additional Ingredients:
- 8 small corn tortillas
- 1/2 cup diced white onion
- 1/2 cup chopped fresh cilantro
- lime wedges for serving
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, garlic, chili powder, cumin, paprika, oregano, onion powder, salt, pepper, and lime juice. Add chicken thighs, toss to coat, cover, and marinate in the refrigerator for at least 30 minutes.
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 5–6 minutes per side until fully cooked. Let rest, then chop into small pieces.
- Prepare the Tacos: Warm tortillas in a skillet or over a flame. Fill each tortilla with chopped chicken, and top with onion and cilantro. Serve with lime wedges.
Notes
- For authentic flavor, use chicken thighs and char them slightly.
- Pair with salsa verde or hot sauce for extra flavor.
