  • 1 cup onion (finely chopped, divided)
  • ½ cup red bell pepper (finely chopped)
  • 1 lb. ground turkey (93/7)
  • 3 Tbsp. taco seasoning mix
  • ½ cup salsa (mild or medium)
  • 8 Romaine lettuce leaves
  • 1 large avocado (finely diced)
  • 1 cup tomatoes (finely diced)
  • ¼ cup cilantro (finely chopped)


Instructions

  1. Sauté Vegetables: In a large skillet over medium heat, combine 2 tablespoons of olive oil, red bell pepper, and half of the chopped onions. Sauté for 3-4 minutes until the onions become translucent and the peppers soften.
  2. Cook Ground Turkey: Push the sautéed vegetables to one side of the skillet, add the remaining tablespoon of olive oil, and add the ground turkey. Cook for 5-7 minutes, stirring occasionally, until the turkey is fully cooked and no longer pink. Then mix the vegetables thoroughly with the turkey.
  3. Season and Simmer: Add the taco seasoning mix and salsa to the skillet. Stir well to combine all ingredients evenly. Reduce the heat to low, cover the skillet, and let the turkey mixture simmer for 5-10 minutes, allowing flavors to meld.
  4. Assemble Lettuce Wraps: When ready to serve, spoon an equal amount of the turkey taco mixture onto each Romaine lettuce leaf. Top each wrap with finely diced avocado, tomatoes, remaining chopped onions, and fresh cilantro. Serve immediately for a crisp and flavorful meal.
