Description
This Taco Casserole with Tortillas is a delicious and easy-to-make dish that brings all the flavors of tacos in a comforting casserole format. Layers of seasoned ground beef, black beans, corn, cheese, and tortillas come together for a satisfying meal.

Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/2 cup water
Additional Ingredients:
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 (10 oz) can diced tomatoes with green chilies, drained
- 6 small flour or corn tortillas, cut into quarters
- 2 cups shredded cheddar or Mexican blend cheese
- Optional toppings: sour cream, salsa, avocado, chopped cilantro, jalapeños
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef with the diced onion until browned and cooked through, about 6–8 minutes. Drain excess grease if needed. Add garlic and cook for 1 minute.
- Stir in the taco seasoning and water, simmering for 2–3 minutes until thickened. Add black beans, corn, and diced tomatoes, stirring to combine.
- Layer half of the tortilla pieces in the bottom of the baking dish. Spoon half of the meat mixture over the tortillas, then sprinkle with 1 cup of cheese.
- Repeat layers with remaining tortillas, meat, and cheese. Cover with foil and bake for 20 minutes.
- Remove foil and bake an additional 10 minutes until the cheese is bubbly and slightly golden. Let rest for 5 minutes before serving. Add desired toppings.
Notes
- For a spicier version, use hot taco seasoning or add chopped jalapeños to the beef mixture.
- You can substitute ground turkey or chicken for the beef.
- This dish reheats well and is great for meal prep.
