- 1/2 cup whole milk
- 1 large egg
- 1 tablespoon melted butter
- 1 1/2 cups fresh or frozen corn kernels
- 1/4 cup finely chopped green onions
- 1/4 cup shredded cheddar cheese
- vegetable oil for frying
For the Honey Butter:
- 1/4 cup unsalted butter (softened)
- 2 tablespoons honey
- pinch of salt
Instructions
- Main Fritters: In a large bowl, whisk together the flour, baking powder, salt, pepper, and smoked paprika. In a separate bowl, whisk the milk, egg, and melted butter until combined. Pour the wet ingredients into the dry and stir until just combined. Fold in the corn, green onions, and shredded cheese.
- Cooking Fritters: Heat a large skillet over medium heat and add a thin layer of vegetable oil. Drop the batter by heaping tablespoons to form small fritters. Flatten slightly with the back of a spoon. Cook for 2–3 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.
- Honey Butter: To make the honey butter, stir the softened butter, honey, and a pinch of salt together until smooth.
- Serving: Stack 2–3 fritters per serving and top with a dollop of honey butter. Serve warm.
