Description

This Stuffed Beef Burrito recipe offers a delicious, hearty meal featuring seasoned ground beef, refried beans, rice, and melted cheddar cheese all wrapped in warm flour tortillas. Topped with fresh salsa, sour cream, tomatoes, cilantro, and avocado slices, these burritos make for a satisfying and flavorful dish perfect for lunch or dinner.

Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 1 package taco seasoning mix (1 oz)
  • 1 tablespoon vegetable oil
  • 1 cup cooked rice

Beans and Tortillas

  • 1 can refried beans (16 oz)
  • 8 large flour tortillas

Toppings and Garnishes

  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • ½ cup sour cream
  • 1 cup diced tomatoes
  • ½ cup chopped cilantro
  • 1 avocado, sliced

Instructions

  1. Cook the Ground Beef. Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook until browned and fully cooked, about 6-8 minutes, breaking up the meat with a spoon as it cooks.
  2. Season the Beef. Drain excess grease from the skillet, then stir in the taco seasoning mix. Follow package instructions by adding the required amount of water and simmer the beef mixture until the sauce thickens and the beef is well-coated.
  3. Warm the Refried Beans. Heat the refried beans in a small saucepan over low heat or microwave them in a microwave-safe dish until heated through, stirring occasionally.
  4. Prepare Tortillas. Lay out the flour tortillas on a clean, flat surface. Spread about 2 tablespoons of the warmed refried beans down the center of each tortilla.
  5. Add Rice and Beef. Spoon a generous amount of the seasoned ground beef on top of the beans, then add about 2 tablespoons of cooked rice.
  6. Layer Cheese and Salsa. Evenly sprinkle shredded cheddar cheese over the beef and rice followed by a spoonful of salsa for extra flavor.
  7. Wrap the Burritos. Carefully fold the sides of each tortilla over the filling, then roll it up tightly from the bottom to form a snug burrito.
  8. Heat the Burritos. Place the burritos seam-side down on a large baking sheet. Warm them in an oven preheated to 350°F (175°C) for about 10 minutes, until heated through and cheese is slightly melted.
  9. Serve with Toppings. Serve the burritos topped with sour cream, diced tomatoes, chopped cilantro, avocado slices, and additional salsa as desired for a fresh, creamy finish.

Notes

  • For a spicier flavor, add chopped jalapeños or hot sauce into the beef mixture.
  • Use whole wheat or gluten-free tortillas if preferred to suit dietary needs.
  • Leftover burritos can be wrapped individually and refrigerate for up to 3 days or freeze for longer storage.
  • To reheat, warm in the oven or microwave until hot throughout.
  • Adding shredded lettuce or sour cream inside the burrito provides extra texture and creaminess.
