Strawberry Syrup
- 2 pounds strawberries, stems removed and divided
- 1/4 cup sugar
- 1/2 cup water
Sangria
- 1 750ml bottle rosé wine
- 1/2 cup loose basil leaves
- 7.5 ounces club soda

- Prepare Strawberry Syrup: Divide about one-third of the strawberries, remove the stems, and quarter them. Combine these cut strawberries with sugar and 1/2 cup of water in a small saucepan.
- Cook Strawberry Syrup: Bring the saucepan to a boil over medium-high heat and let it cook for 10 minutes, stirring occasionally to dissolve the sugar and release strawberry flavors. Then, strain the mixture through a fine mesh strainer into a bowl, pressing the strawberries with the back of a spoon to extract as much liquid as possible. Set the syrup aside to cool slightly.
- Slice Remaining Strawberries: Slice the remaining strawberries for garnish and visual appeal—consider cutting them into heart shapes for added charm.
- Assemble Sangria: In a large pitcher, combine the sliced strawberries, fresh basil leaves, strawberry syrup, and rosé wine. Stir gently to blend all flavors together. Cover and refrigerate for at least two hours to chill and allow the flavors to meld.
- Serve: Just before serving, stir in the club soda to add a refreshing sparkle. Pour into glasses and enjoy immediately.
