Description

This Stir-fried Bok Choy with Ground Meat recipe is a quick and flavorful dish perfect for a weeknight dinner. Featuring tender bok choy and your choice of ground meat sautéed with aromatic garlic, ginger, and a savory blend of soy and oyster sauces, this stir-fry provides a delicious balance of textures and umami-rich flavors. Easy to prepare and customizable, it pairs beautifully with steamed rice or noodles for a satisfying meal.

Ingredients

Scale

Protein

  • 1 lb ground meat (chicken, pork, turkey, or beef)

Vegetables

  • 4 cups bok choy, chopped (about 4 medium heads)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced

Sauces & Seasonings

  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon oyster sauce (optional, for extra umami)
  • 1 tablespoon hoisin sauce (optional, for sweetness)
  • 1 teaspoon rice vinegar
  • 1 tablespoon sugar (optional, to balance flavors)
  • 1 teaspoon sesame oil (optional, for garnish)
  • Red pepper flakes (optional, for heat)
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Prepare the Bok Choy: Rinse the bok choy thoroughly to remove any dirt between the leaves. Chop it into bite-sized pieces and set aside.
  2. Cook the Ground Meat: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground meat and cook, breaking it apart with a spoon until browned and fully cooked, about 5-7 minutes. Remove the cooked meat from the pan and set aside.
  3. Sauté Aromatics: In the same skillet, add another tablespoon of oil if needed. Add the chopped onion, minced garlic, and minced ginger. Sauté for 2-3 minutes until fragrant and the onion is softened.
  4. Add the Bok Choy: Add the chopped bok choy to the pan, stirring well to coat it in the oil and aromatics. Cook for 3-4 minutes until the bok choy is tender but still slightly crisp.
  5. Stir in Sauces: Return the cooked ground meat to the pan. Stir in the soy sauce, oyster sauce (if using), hoisin sauce (if using), rice vinegar, and sugar. Mix everything together and cook for another 2-3 minutes, allowing the flavors to meld.
  6. Finish and Serve: If you desire heat, sprinkle red pepper flakes on top. Drizzle with sesame oil for extra flavor. Garnish with fresh cilantro or green onions, if desired. Serve immediately over steamed rice or noodles for a complete meal.

Notes

  • Use low-sodium soy sauce to control salt content.
  • Oyster and hoisin sauces are optional but add depth and sweetness.
  • Adjust the type of ground meat to your preference or dietary needs.
  • For a vegetarian version, substitute ground meat with crumbled tofu or tempeh.
  • Serve with steamed rice or noodles to make a full meal.
  • Red pepper flakes can be omitted if you prefer no heat.
