Ingredients
Scale
Brownie Bites
- 1 box of brownie mix (or homemade brownies if preferred)
- ½ cup vegetable oil (or as instructed on the brownie mix box)
- 2 large eggs
- 2 tbsp water (or as instructed on the brownie mix box)
- ¼ tsp peppermint extract (optional for a minty twist)
Frosting
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 2-3 tbsp heavy cream
- 1 tsp vanilla extract
- ½ tsp green food coloring (gel or liquid)
- A pinch of salt
Decoration
- Green sprinkles or shamrock decorations
- White chocolate chips or mini marshmallows (optional)
Instructions
- Prepare Brownie Batter: Preheat your oven according to the brownie mix instructions. In a mixing bowl, combine the brownie mix, vegetable oil, eggs, water, and optional peppermint extract. Stir well until the batter is smooth and fully incorporated.
- Bake Brownies: Spread the batter evenly into a lined or greased baking pan. Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out with moist crumbs but not wet batter. Remove from oven and allow to cool completely.
- Cut Brownie Bites: Once cooled, cut the baked brownies into 16-20 bite-sized squares for easy serving and frosting.
- Make the Frosting: In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar one cup at a time, alternating with 2 tablespoons of heavy cream, vanilla extract, green food coloring, and a pinch of salt. Mix until smooth and fluffy. Adjust the consistency by adding the remaining tablespoon of heavy cream or more powdered sugar if needed.
- Frost Brownie Bites: Using a spoon or piping bag, generously frost each brownie bite with the green peppermint frosting, covering the top evenly.
- Decorate: Sprinkle green sprinkles or shamrock decorations on top of each frosted brownie bite. Add white chocolate chips or mini marshmallows if desired for extra festive flair.
- Serve: Arrange on a serving platter and enjoy these festive St. Patrick’s Day treats at room temperature.
Notes
- You can substitute the box mix with your favorite homemade brownie recipe for a personalized touch.
- For a stronger mint flavor, increase the peppermint extract slightly, but be cautious as it’s potent.
- If your frosting is too thick, add a teaspoon of heavy cream at a time until desired spreadability.
- Store leftover brownie bites in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Allow brownies to cool completely before frosting to prevent melting and sliding.
