For the Grits:

  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1/2 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons butter
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 1/2 green bell pepper, diced
  • 2 cloves garlic, minced

For Serving:

  • Chopped green onions for garnish
  • Hot sauce for serving (optional)

Instructions

  1. Prepare the Grits: Bring water or broth to a boil, add grits, and cook for 20–25 minutes. Stir in butter, cream, cheese, salt, pepper, and cayenne. Keep warm.
  2. Cook the Shrimp: Season shrimp with Cajun seasoning. Cook bacon until crisp, then sauté onion, bell pepper, and garlic. Add shrimp and cook until pink. Stir in bacon.
  3. Assemble: Spoon creamy grits into bowls, top with shrimp mixture, and garnish with green onions. Serve with hot sauce if desired.

Notes

  • For creamier grits, use milk instead of water. Add extra cayenne or hot sauce for more heat. Try a dash of smoked paprika for added flavor.
