Description

Delight your guests with these Spicy Mexican Corn Bites, featuring a flavorful blend of corn, cotija cheese, and spices nestled in buttery crescent roll dough. Perfect as a party appetizer or a savory snack, these bites offer a creamy, zesty, and slightly spicy taste inspired by classic Mexican street food flavors.

Ingredients

Scale

For the Corn Filling

  • 2 cups frozen corn, thawed and drained
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions

For the Dough

  • 1 (8-ounce) can refrigerated crescent roll dough
  • Nonstick cooking spray

Instructions

  1. Prepare the Oven and Muffin Tin: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with nonstick cooking spray to prevent sticking.
  2. Form the Dough Cups: Unroll the crescent roll dough and press it firmly into the bottom and up the sides of each mini muffin cup, trimming excess dough as needed to form neat little cups.
  3. Mix the Corn Filling: In a medium bowl, combine the thawed corn, crumbled cotija cheese, mayonnaise, sour cream, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, cayenne pepper (if using), chopped cilantro, and green onions. Stir well until all ingredients are evenly incorporated.
  4. Fill the Dough Cups: Spoon about 1 tablespoon of the prepared corn mixture into each crescent dough cup, filling them generously but leaving a little space at the top.
  5. Bake the Bites: Place the mini muffin tin in the preheated oven and bake for 12 to 15 minutes, or until the edges of the crescent dough are golden brown and the filling is heated through.
  6. Cool and Serve: Remove the bites from the oven and allow them to cool slightly in the pan before carefully removing. Serve warm or at room temperature for the best flavor and texture.

Notes

  • You can substitute queso fresco or feta cheese for the cotija to alter the flavor profile slightly.
  • Add a sprinkle of Tajín seasoning or a dash of hot sauce on top just before serving for an extra spicy kick.
  • These bites are ideal for parties and can be prepared a few hours in advance, then reheated or served at room temperature.
