Description

A delicious and creamy spaghetti dish featuring succulent shrimp cooked in a flavorful tomato sauce enhanced with garlic, basil, and a splash of white wine. Perfectly al dente pasta tossed in a rich cream-infused sauce and topped with Parmesan cheese for a comforting and elegant meal ideal for any occasion.

Ingredients

Scale

Shrimp

  • 1 lb medium raw shrimp (peeled and deveined)
  • Salt and pepper to taste
  • 2 Tbsp olive oil (for sautéing shrimp)

Pasta

  • 3/4 lb spaghetti (or angel hair pasta)
  • 1 Tbsp olive oil (for pasta water)
  • Salt for pasta water

Tomato Sauce

  • 6 medium tomatoes (diced)
  • 1 small onion or 1/4 cup green onion (finely chopped)
  • 1/4 tsp hot chili flakes
  • 1/2 tsp dried basil or 2 Tbsp chopped fresh basil
  • 1 garlic clove (pressed)
  • 4 Tbsp unsalted butter
  • 1 cup dry white wine (avoid sweet wine)
  • 1/2 cup heavy cream
  • Salt and pepper to taste

To Serve

  • Grated Parmesan cheese

Instructions

  1. Prepare the shrimp: Peel and pat dry the shrimp with paper towels. Lightly season with salt and pepper. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sauté the shrimp for about 3 minutes, flipping halfway, until cooked through. Remove shrimp and set aside.
  2. Make the tomato sauce: In a heavy pan, combine diced tomatoes, chopped onion, chili flakes, basil, pressed garlic, and unsalted butter. Season with salt and pepper. Add the white wine and cook over medium-high heat until the mixture softens and most of the wine evaporates, leaving about 1/4 cup of liquid remaining.
  3. Cook the pasta: Bring a large pot of salted water to a boil and add 1 tablespoon olive oil. Cook the spaghetti according to package instructions until al dente. Drain, rinse briefly, and set aside.
  4. Finish the sauce: Stir the heavy cream into the reduced tomato mixture. Add the cooked shrimp back into the pan and warm gently for 2 minutes. Adjust seasoning with salt and pepper as needed.
  5. Toss and serve: Combine the cooked pasta with the creamy tomato shrimp sauce. Sprinkle generously with Parmesan cheese and serve immediately while hot.

Notes

  • Use fresh medium shrimp for the best taste and texture.
  • You can substitute dry white wine with chicken broth if preferred.
  • For a spicier dish, increase the chili flakes to taste.
  • Ensure pasta is not overcooked to maintain perfect al dente texture.
  • If fresh basil is unavailable, dried basil works well too.
  • Parmesan cheese can be omitted or replaced with a vegan cheese alternative for dietary preferences.
