- 1 lb cod fillets (cut into chunks)
- 2 tablespoons coconut oil
- 1 medium onion (finely sliced)
- 2 cloves garlic (minced)
- 1-inch piece fresh ginger (grated)
Spices and Seasonings:
- 1 green chili (sliced, optional)
- 1 teaspoon mustard seeds
- 10-12 fresh curry leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt (or to taste)
Additional Ingredients:
- 1 large tomato (chopped)
- 1 cup full-fat coconut milk
- 1/4 cup water
- juice of 1/2 lime
- fresh cilantro leaves (for garnish)
Instructions
- Prepare the Spice Base: Heat coconut oil in a skillet, add mustard seeds, curry leaves, onions, green chili, garlic, and ginger. Sauté until onions are soft.
- Add Spices: Stir in turmeric, coriander, chili powder, cumin, and salt. Cook until fragrant.
- Cook the Curry: Add tomatoes, coconut milk, and water. Simmer, then add cod. Cover and cook until fish is tender.
- Finish and Serve: Squeeze lime juice, garnish with cilantro. Serve hot with rice or flatbread.
Notes
- You can substitute cod with halibut or tilapia.
- Add coconut cream for extra richness.
