For the Beef:
- 2 pounds beef chuck, cut into 1 1/2-inch cubes
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Stew:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 (11.2-ounce) bottle Guinness stout
- 4 carrots, peeled and chopped
- 3 medium potatoes, peeled and chopped
- 2 celery stalks, chopped
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Toss the beef cubes with flour, salt, and pepper: In a large bowl, coat the beef evenly.
- Brown the beef: Brown the beef in batches in a skillet, then transfer to the slow cooker.
- Sauté onion and garlic: Cook in the skillet until softened, then add tomato paste.
- Deglaze the pan: Use beef broth to scrape up browned bits, then transfer to slow cooker.
- Add remaining ingredients: Combine beef broth, Guinness, vegetables, Worcestershire sauce, thyme, and bay leaf in slow cooker.
- Cook: Cover and cook on low for 8 hours or high for 4–5 hours.
- Adjust seasoning and serve: Discard bay leaf, adjust seasoning if needed, and garnish with parsley before serving.
Notes
- This stew thickens as it sits. For a thicker consistency, add a cornstarch slurry during the last 30 minutes of cooking.
- Serve with crusty bread or over mashed potatoes for a complete meal.
