Description

This Slow Cooker Guinness Beef Stew recipe is a hearty and comforting dish perfect for a cozy dinner. Tender chunks of beef, vegetables, and the rich flavor of Guinness stout come together in a deliciously satisfying stew.

Ingredients

Scale

For the Beef:

  • 2 pounds beef chuck, cut into 1 1/2-inch cubes
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Stew:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 (11.2-ounce) bottle Guinness stout
  • 4 carrots, peeled and chopped
  • 3 medium potatoes, peeled and chopped
  • 2 celery stalks, chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Toss the beef cubes with flour, salt, and pepper: In a large bowl, coat the beef evenly.
  2. Brown the beef: Brown the beef in batches in a skillet, then transfer to the slow cooker.
  3. Sauté onion and garlic: Cook in the skillet until softened, then add tomato paste.
  4. Deglaze the pan: Use beef broth to scrape up browned bits, then transfer to slow cooker.
  5. Add remaining ingredients: Combine beef broth, Guinness, vegetables, Worcestershire sauce, thyme, and bay leaf in slow cooker.
  6. Cook: Cover and cook on low for 8 hours or high for 4–5 hours.
  7. Adjust seasoning and serve: Discard bay leaf, adjust seasoning if needed, and garnish with parsley before serving.

Notes

  • This stew thickens as it sits. For a thicker consistency, add a cornstarch slurry during the last 30 minutes of cooking.
  • Serve with crusty bread or over mashed potatoes for a complete meal.
