Beef Bites:

  • 2 lbs beef stew meat (cut into bite-sized chunks)

Potatoes:

  • 1 1/2 lbs baby potatoes (halved)

Garlic Butter Sauce:

  • 4 tablespoons unsalted butter (melted)
  • 4 cloves garlic (minced)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Garnish:

  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preparation: Place beef and potatoes in the slow cooker.
  2. Garlic Butter Mixture: Mix melted butter, garlic, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper. Pour over beef and potatoes, ensuring even coating.
  3. Cooking: Cover and cook on low for 7–8 hours or on high for 3 1/2–4 hours until beef is tender and potatoes are cooked. Stir gently before serving, garnish with parsley.

Notes

  • For added richness, consider stirring in beef broth or cream during the last hour of cooking.
  • Yukon Gold potatoes can be used instead of baby potatoes.
