Potatoes:
- 1 1/2 lbs baby potatoes (halved)
Garlic Butter Sauce:
- 4 tablespoons unsalted butter (melted)
- 4 cloves garlic (minced)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
Garnish:
- 2 tablespoons chopped fresh parsley
Instructions
- Preparation: Place beef and potatoes in the slow cooker.
- Garlic Butter Mixture: Mix melted butter, garlic, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper. Pour over beef and potatoes, ensuring even coating.
- Cooking: Cover and cook on low for 7–8 hours or on high for 3 1/2–4 hours until beef is tender and potatoes are cooked. Stir gently before serving, garnish with parsley.
Notes
- For added richness, consider stirring in beef broth or cream during the last hour of cooking.
- Yukon Gold potatoes can be used instead of baby potatoes.
