Ingredients
Scale
Pork Chops
- 4 bone-in pork chops
- 1 tablespoon olive oil (for pork chops)
- 1.06 ounces McCormick Grill Mates Zesty Herb Marinade Seasoning Mix (1 packet)
Potatoes
- 3 cups halved yellow baby potatoes
- 1-2 tablespoons olive oil (for potatoes)
- Half of the seasoning packet
Green Beans
- 3 cups fresh green beans, ends trimmed (about 1 pound)
- 1 tablespoon olive oil (for green beans)
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ½ teaspoon garlic powder
Optional Topping
- 2 tablespoons freshly shredded Parmesan cheese
Instructions
- Preheat and prepare baking sheet: Preheat the oven to 425°F (218°C). Spray a large baking sheet with nonstick cooking spray and set aside to prevent sticking.
- Oil the pork chops: Place the pork chops on a plate and drizzle 1 tablespoon of olive oil over both sides to help the seasoning adhere.
- Season the pork chops: Open the seasoning packet and pour it into a small bowl. Using half the seasoning, sprinkle it evenly over both sides of the pork chops and gently rub it in for maximum flavor.
- Set pork chops aside: Let the seasoned pork chops rest while preparing the vegetables, allowing the flavors to absorb.
- Prepare the potatoes: In a large bowl, toss the halved yellow baby potatoes with 1-2 tablespoons of olive oil and the remaining half of the seasoning packet until evenly coated.
- Arrange potatoes on sheet pan: Place the potatoes on one third of the prepared baking sheet for initial roasting.
- Roast potatoes: Place the baking sheet in the oven and roast the potatoes for 10 to 15 minutes, allowing them to start softening and browning.
- Season the green beans: While the potatoes roast, place the green beans in a medium bowl. Drizzle with 1 tablespoon of olive oil and season with kosher salt, black pepper, and garlic powder. Toss to coat evenly.
- Turn the potatoes: Remove the baking sheet from the oven and turn the potatoes so they cook evenly on all sides.
- Add pork chops to the pan: Place the seasoned pork chops in the center section of the baking sheet and return it to the oven. Roast for about 10 minutes.
- Add green beans and continue roasting: After 10 minutes, add the seasoned green beans to the remaining third of the pan. Roast everything together for 10 to 20 more minutes until the vegetables are tender and the pork chops reach an internal temperature of 145°F (63°C).
- Finish and serve: Remove the sheet pan from the oven. Optionally, sprinkle freshly shredded Parmesan cheese over the potatoes before serving. Plate the pork chops with the roasted potatoes and green beans for a delicious, balanced meal.
Notes
- Make sure to use a meat thermometer to check pork chops reach a safe internal temperature of 145°F.
- Parmesan cheese topping is optional but adds a nice savory finish to the potatoes.
- You can swap yellow baby potatoes for red or fingerling potatoes if preferred.
- Adjust seasoning amounts based on personal taste and dietary needs.
- If you prefer crispier vegetables, you can separate them on the sheet pan to avoid steaming.
