Description

For the Pork Chops and Sauce

  • 2 tablespoons olive oil (divided)
  • 1 large onion (sliced into quarter to half inch thick rings)
  • 6 boneless pork chops
  • Salt and pepper (to taste)
  • 2 (10-ounce) cans cream of chicken soup
  • 1/2 cup ketchup
  • 2 tablespoons Worcestershire sauce


Instructions

  1. Sauté Onions: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Slice the onion into rings about a quarter to half an inch thick. Add the onion slices to the pan and sauté for about 12 minutes, flipping halfway through, until onions are softened and lightly browned. Remove onions from skillet and set aside.
  2. Brown Pork Chops: Turn the heat to medium-high and add the remaining 1 tablespoon of olive oil. Season both sides of the pork chops with salt and pepper. Add the pork chops to the skillet and brown on each side for about 2 minutes until they develop a golden crust.
  3. Prepare Sauce Mixture: In a medium bowl, combine the cream of chicken soup, ketchup, and Worcestershire sauce. Mix well to incorporate all ingredients evenly.
  4. Simmer Pork Chops in Sauce: Place one sautéed onion ring on top of each browned pork chop in the skillet. Pour the prepared sauce mixture evenly over the pork chops and onions. Reduce heat to low to maintain a gentle simmer. Cover the skillet and cook for about 30 minutes or until the pork chops are cooked through and a meat thermometer inserted into the thickest part reads 160°F (71°C).
  5. Optional Crock Pot Method: After browning the pork chops, transfer them to a crock pot. Cover the chops with the sautéed onions, then pour the sauce mixture over the top. Cover and cook on high for about 4 hours until pork is tender and fully cooked. Serve hot, ideally with mashed potatoes.
