Roasted Cranberries

  • 1 cup fresh cranberries
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon fresh thyme leaves
  • Salt and black pepper to taste

Toppings

  • 4 ounces goat cheese, crumbled
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons chopped walnuts or pecans (optional)
  • 1/4 small red onion, thinly sliced
  • Fresh arugula or baby greens for garnish


Instructions

  1. Preheat and roast cranberries: Preheat the oven to 400°F (200°C). In a small bowl, combine the fresh cranberries with olive oil, maple syrup or honey, balsamic vinegar, fresh thyme leaves, and a pinch of salt and black pepper. Toss well to coat. Spread the cranberry mixture evenly on a baking sheet and roast for 10–12 minutes, or until the cranberries begin to burst and caramelize, releasing their vibrant flavors.
  2. Prepare flatbreads and assemble toppings: While cranberries are roasting, place the flatbreads on a separate baking sheet. Evenly distribute the crumbled goat cheese, shredded mozzarella, thinly sliced red onion, and roasted cranberries on top of each flatbread. If using, sprinkle chopped walnuts or pecans over the toppings for extra crunch.
  3. Bake the assembled flatbreads: Bake the topped flatbreads in the preheated oven for 8–10 minutes, or until the flatbread edges turn crispy and the cheese is melted and slightly golden.
