- Prepare the cheesecake mixture: In a mixing bowl, combine the red velvet cake crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix thoroughly until a soft, dough-like consistency forms, making it easy to shape into balls.
- Shape the bites: Scoop about 1 tablespoon of the mixture and roll it into small balls using your hands. Place each ball onto a parchment-lined baking sheet. Once all are formed, refrigerate the tray for at least 1 hour to allow the bites to firm up and hold their shape.
