- Prepare the French toast: In a shallow bowl, whisk together the eggs, milk, pumpkin purée, brown sugar, vanilla extract, pumpkin pie spice, and salt until smooth. Dip each slice of bread into the mixture, allowing it to soak for a few seconds per side.
