Potatoes
- 1 ½ lbs baby potatoes, halved
- 1 teaspoon salt (for boiling water)
Bacon and Vegetables
- 4 oz bacon, chopped
- 1 yellow onion, diced
- 12 oz frozen cut green beans
Seasoning
- 1 teaspoon everything bagel seasoning
- Salt and pepper to taste
Instructions
- Boil Potatoes: Slice the baby potatoes in half and place them in a large pot. Cover with water and add 1 teaspoon of salt. Bring the water to a boil over high heat, then reduce to medium-high and boil until the potatoes are fork-tender, about 7 to 8 minutes. Drain the potatoes using a colander.
- Cook Bacon: While the potatoes are boiling, heat a large skillet over medium heat and cook the chopped bacon until it is brown and crispy. Remove the bacon from the skillet, but leave all the bacon fat in the skillet or drain off excess fat leaving about 2 tablespoons for flavor.
- Sauté Onions: Add the diced onion to the skillet with the bacon fat and sauté over medium heat until the onion is soft and slightly browned, about 4 to 5 minutes.
- Cook Potatoes: Add the drained potatoes to the skillet with the onions. Stir briefly to coat the potatoes in the bacon fat, then let them cook undisturbed for a few minutes to develop a browned crust. Stir occasionally until the potatoes are evenly browned.
- Add Green Beans: Once the potatoes have browned, add the frozen green beans directly to the skillet without thawing. Continue to cook and stir occasionally until the green beans are heated through, about 5 to 6 minutes.
- Add Bacon and Seasoning: Chop the cooked bacon if needed and return it to the skillet. Sprinkle the everything bagel seasoning over the entire skillet mixture. Stir well to combine all ingredients. Taste and adjust seasoning with salt, pepper, or additional seasoning as desired. Serve hot immediately.
