Instructions

  1. Prepare the oven and peaches: Preheat your oven to 350°F (175°C). In a large bowl, toss the peeled and sliced peaches with 1/4 cup of the sugar, lemon juice, 1/2 teaspoon cinnamon, and ground nutmeg. Let this mixture sit to allow the flavors to meld.
  2. Mix the dry ingredients: In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, salt, and the remaining 1/2 teaspoon cinnamon until well combined.
  3. Add wet ingredients to batter: Stir in the milk and vanilla extract into the dry ingredients gently, mixing just until combined to avoid a tough batter.
  4. Assemble the cobbler: Pour the melted butter into the bottom of a 9×13-inch baking dish. Carefully pour the batter over the melted butter without stirring. Then, spoon the peach mixture and all its juices evenly over the top of the batter gently, again avoiding stirring to keep the layers distinct.
  5. Bake: Place the baking dish in the preheated oven and bake for 45–50 minutes, or until the top is golden brown and the batter has risen around the peaches.
  6. Cool and serve: Remove from the oven and let the cobbler cool for 10–15 minutes before serving. This allows the batter to set and the flavors to develop. Serve warm, ideally topped with vanilla ice cream or whipped cream for an extra indulgent treat.
