Description

Parmesan Lemon Chicken is a delicious and easy skillet dish featuring tender chicken breasts coated in a savory Parmesan and garlic flour mixture, pan-fried to a golden crisp, then simmered in a bright, tangy lemon sauce. Perfect for a quick weeknight dinner, this recipe combines creamy, zesty, and savory flavors that pair wonderfully with rice, pasta, or steamed vegetables.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Coating

  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cooking fats

  • 2 tablespoons olive oil
  • 2 tablespoons butter

Sauce

  • Juice and zest of 1 lemon
  • 1/2 cup chicken broth

Garnish (optional)

  • 1 tablespoon chopped fresh parsley
  • Lemon slices

Instructions

  1. Pound the chicken: Use a meat mallet to pound the chicken breasts to an even thickness to ensure uniform cooking.
  2. Prepare the coating: In a shallow dish, mix together the flour, grated Parmesan, garlic powder, salt, and black pepper.
  3. Coat the chicken: Dredge each chicken breast in the flour mixture, pressing firmly so the coating adheres well.
  4. Heat the skillet: Warm olive oil and butter in a large skillet over medium-high heat until hot.
  5. Cook the chicken: Add the coated chicken breasts to the skillet and cook for 4 to 5 minutes on each side until golden brown and fully cooked through.
  6. Remove chicken: Take the chicken out of the pan and set aside to keep warm.
  7. Make the sauce: Reduce heat to medium; add the lemon juice, lemon zest, and chicken broth to the skillet. Scrape the browned bits off the pan bottom and let the sauce simmer for 2 to 3 minutes to reduce slightly.
  8. Finish cooking: Return the chicken breasts to the pan, spoon sauce over them, and cook an additional 2 minutes so the flavors meld.
  9. Garnish and serve: Sprinkle chopped fresh parsley and garnish with lemon slices before serving.

Notes

  • For extra crispiness, add 2 tablespoons of panko breadcrumbs to the flour and Parmesan mixture.
  • This dish pairs beautifully with rice, pasta, or steamed vegetables for a complete meal.
