  • 1 yellow bell pepper (sliced)

  • 1 tablespoon tomato paste
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried thyme

Instructions

  1. Season the chicken: Season the chicken with salt, pepper, and oregano.
  2. Sear the chicken: Heat olive oil in a large skillet or braiser over medium-high heat. Add the chicken, skin side down, and sear for 4–5 minutes per side until golden brown. Remove chicken and set aside.
  3. Cook the vegetables: In the same pan, add sliced peppers, onion, and garlic. Sauté for 4–5 minutes until softened.
  4. Make the sauce: Pour in the wine and scrape up any browned bits. Stir in the crushed tomatoes, tomato paste, red pepper flakes, and thyme.
  5. Simmer: Return the chicken to the pan, skin side up, nestling it into the sauce. Cover and simmer for 30–35 minutes until the chicken is cooked through.
  6. Thicken the sauce: Uncover for the last 5–10 minutes to let the sauce thicken slightly.
  7. Garnish and serve: Garnish with parsley and fresh basil before serving.
