  • 5 large eggs
  • ½ cup milk
  • ½ tsp dried basil

  • 1 can diced tomatoes, drained (15 oz.)
  • 2 cups baby spinach
  • Fresh basil, chopped (for garnish)


Instructions

  1. Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it’s ready for baking the frittata.
  2. Prepare the Egg Mixture: In a bowl, whisk together the eggs, milk, dried basil, dried oregano, and salt and pepper to taste until fully combined. Set this mixture aside.
  3. Cook the Bacon: In a skillet over medium heat, cook the chopped bacon until it becomes crispy. Once done, remove and set aside, leaving the bacon fat in the skillet.
  4. Sauté Vegetables: Add olive oil, diced garlic, and baby spinach into the skillet. Cook for about 3 minutes until the spinach wilts. Stir in the drained diced tomatoes and combine evenly with the other ingredients.
  5. Add Egg Mixture and Bacon: Pour the prepared egg mixture over the spinach and tomatoes in the skillet. Stir in the crispy bacon pieces and gently stir the entire skillet once to mix everything well. Let the mixture sit undisturbed for about 2 minutes until the edges just start to set.
  6. Bake the Frittata: Transfer the skillet to the preheated oven and bake for 15 minutes or until the eggs are fully set and the top is slightly golden brown.
