- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 1/4 cups beef broth
- 1 cup canned diced tomatoes (with juices)
- 1 cup shredded cheddar cheese

Instructions
- Prepare the Vegetables: Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper and sauté for 3–4 minutes until softened.
- Add Garlic: Stir in the minced garlic and cook for 1 more minute, releasing its aroma.
- Brown the Beef: Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks. Drain excess grease if necessary.
- Season the Meat: Stir in chili powder, paprika, dried oregano, salt, and black pepper, ensuring the beef is evenly coated with the spices.
- Add Rice and Liquids: Pour in the uncooked rice, canned diced tomatoes with juices, and beef broth. Stir well to combine.
- Simmer: Bring the mixture to a boil. Then reduce heat to low, cover the skillet, and simmer for 18–20 minutes, or until the rice is tender and the liquid is fully absorbed.
- Add Cheese: Remove the skillet from heat, sprinkle shredded cheddar cheese evenly over the top, and cover again for 2–3 minutes until the cheese melts.
- Garnish and Serve: Garnish with chopped fresh parsley if desired. Serve warm for a satisfying meal.
Notes
- You can substitute brown rice, but increase the broth to 2 3/4 cups and simmer for 35–40 minutes.
- For a spicier version, add a pinch of cayenne pepper or diced jalapeños when seasoning the beef.
