Instructions

  1. Prepare the broth: In a large pot, combine the beef broth, sliced onion, sliced ginger, star anise, cloves, cinnamon stick, fish sauce, soy sauce, and sugar. Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer gently for 30 minutes to develop deep flavors.
  2. Strain the broth: After simmering, strain the broth through a fine mesh sieve into another pot or container, discarding the solids. Return the clear broth to the pot and keep warm on low heat.
  3. Cook the noodles: Meanwhile, prepare the rice noodles according to the package instructions, typically by soaking or boiling for a few minutes until tender. Drain them well and rinse under cold water to stop cooking and prevent sticking. Set aside.
  4. Assemble the pho bowls: Divide the cooked rice noodles evenly among serving bowls. Top each bowl with the thinly sliced raw beef arranged over the noodles.
