Description

These Mint Chocolate Chip Protein Balls are a delicious and healthy no-bake snack perfect for a quick energy boost. Combining the freshness of peppermint with rich dark chocolate and the protein power of almond butter and protein powder, these balls are easy to make and perfect for on-the-go munching or a post-workout treat.

Ingredients

Scale

Dry Ingredients

  • 1 cup rolled oats
  • 1/2 cup chocolate protein powder
  • 1/4 cup mini dark chocolate chips
  • pinch of salt

Wet Ingredients

  • 1/4 cup almond butter
  • 2 tablespoons honey
  • 1/4 teaspoon peppermint extract
  • 2 tablespoons milk of choice (add more if needed)

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the rolled oats, chocolate protein powder, mini dark chocolate chips, and a pinch of salt. Stir well to evenly distribute all dry components.
  2. Prepare Wet Mixture: In a separate bowl, whisk together almond butter, honey, peppermint extract, and milk until the mixture is smooth and well combined.
  3. Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients and mix thoroughly until the ingredients are fully incorporated. If the mixture feels too dry, add a little more milk, one teaspoon at a time, until it holds together.
  4. Form Balls: Roll the mixture into 1-inch balls using your hands and place them on a baking sheet or plate lined with parchment paper or a silicone mat for easy removal.
  5. Chill: Refrigerate the protein balls for at least 30 minutes to allow them to firm up and set properly before serving.

Notes

  • You can substitute almond butter with peanut butter or sunflower seed butter for a nut-free option.
  • For a stronger mint flavor, add an extra drop of peppermint extract.
  • Store in an airtight container in the refrigerator for up to one week to keep them fresh.
