These Mini Jalapeño Popper Egg Rolls combine creamy, cheesy, and spicy flavors wrapped in a crispy golden exterior.   • 23 jalapeños, seeded and finely diced
  • ¼ teaspoon garlic powder

  • 1216 mini egg roll wrappers
  • Vegetable oil for frying

Instructions

  1. Prepare the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar, crumbled bacon, diced jalapeños, garlic powder, and onion powder. Mix well until fully incorporated and smooth.
  2. Assemble Egg Rolls: Lay out one egg roll wrapper with a corner pointing towards you. Spoon about 1 tablespoon of the filling onto the center of the wrapper. Fold the bottom corner up over the filling, then fold the sides inward tightly. Roll the wrapper firmly to enclose the filling completely. Seal the edge with a dab of water to ensure it stays closed. Repeat with remaining wrappers and filling.
  3. Heat Oil: Pour about 2 inches of vegetable oil into a deep skillet or saucepan and heat it to 350°F (175°C). Use a thermometer to maintain proper frying temperature.
  4. Fry Egg Rolls: Carefully place the egg rolls in the hot oil in batches without overcrowding. Fry each side for 2 to 3 minutes or until the wrappers are golden brown and crispy.
