Instructions

  1. Heat the skillet: Preheat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and allow it to shimmer, ensuring it’s hot enough for sautéing.
  2. Season the shrimp: In a bowl, season the shrimp evenly with salt and black pepper. Set aside while preparing the garlic, asparagus, and lemon zest.
  3. Sauté asparagus: Add the asparagus pieces to the skillet and cook for about 3–4 minutes until they turn bright green and are just tender. Remove the asparagus from the skillet and set aside.
  4. Sauté garlic and cook shrimp: Add the remaining tablespoon of olive oil to the skillet. Add the minced garlic and sauté for about 30 seconds until fragrant. Then place the seasoned shrimp in a single layer in the skillet.
  5. Cook shrimp: Cook the shrimp for 2–3 minutes per side until they turn opaque and develop a slightly golden color. Once cooked, return the asparagus to the skillet.
  6. Add lemon and combine: Pour in the Meyer lemon juice and sprinkle the lemon zest over the shrimp and asparagus. Toss everything together well to coat in the bright citrus flavor. Remove the skillet from heat.
  7. Garnish and serve: Sprinkle with chopped fresh parsley if desired, and serve immediately while hot to enjoy the juicy, citrus-garlic flavors at their best.
