Description

Mediterranean Steak Bowls featuring tender, grilled flank or sirloin steak served with a fresh, vibrant mix of cherry tomatoes, cucumber, bell pepper, and red onion. Topped with a flavorful Greek yogurt sauce infused with garlic, lemon, and spices, and garnished with crunchy nuts for added texture. A quick, healthy, and satisfying meal perfect for lunch or dinner.

Ingredients

Scale

Steak

  • 1 lb steak (flank or sirloin recommended)
  • Salt and pepper, to taste

Vegetables

  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup yellow bell pepper, diced
  • 1/4 cup fresh parsley, chopped

Yogurt Sauce

  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • Salt and pepper, to taste

Garnish

  • Almonds or nuts of choice, for garnish (optional)

Instructions

  1. Cook the Steak: Season the steak generously with salt and pepper on both sides. Grill or sear the steak over medium-high heat for about 4 to 5 minutes per side to reach medium-rare doneness. Once cooked, remove the steak and let it rest for a few minutes before slicing it thinly against the grain to preserve tenderness.
  2. Prepare the Veggies: In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, thinly sliced red onion, diced yellow bell pepper, and chopped fresh parsley. Add a pinch of salt to season and toss everything gently to mix the flavors.
  3. Make the Yogurt Sauce: In a small bowl, whisk together the plain Greek yogurt, olive oil, lemon juice, minced garlic, paprika, cumin, and a little salt and pepper. Mix until smooth and creamy, allowing the spices to blend well into the sauce.
  4. Assemble Bowls: In serving bowls, start by layering the fresh vegetable mixture as the base. Arrange the thinly sliced steak on top, and then add spoonfuls of the prepared yogurt sauce over the steak and veggies for added creaminess and flavor.
  5. Garnish: Finish the bowls by sprinkling chopped almonds or your favorite nuts on top, along with extra fresh herbs if desired. Serve immediately to enjoy the contrast of warm steak and cool, fresh ingredients.

Notes

  • For a more authentic Mediterranean flavor, consider adding olives or feta cheese as additional toppings.
  • You can substitute the steak with grilled chicken or lamb if preferred.
  • If you don’t have a grill, searing the steak in a hot skillet works just as well.
  • Make sure to let the steak rest after cooking to keep it juicy.
  • Preparation can be partially done ahead by chopping veggies and making the yogurt sauce in advance.
