Ingredients
Scale
Potatoes
- 4 large russet potatoes, scrubbed clean and dried
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
Steak Bites
- 1 pound sirloin steak, cut into bite-sized pieces
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon butter
Toppings
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup cooked and crumbled bacon
- 1/4 cup sliced green onions
Instructions
- Preheat the oven: Preheat your oven to 425°F to prepare for baking the potatoes.
- Prepare the potatoes: Rub each russet potato with olive oil and sprinkle with kosher salt. Place them directly on the oven rack to bake for 45–50 minutes until they are tender when pierced with a fork.
- Season the steak bites: While the potatoes bake, season the sirloin steak pieces with Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper to infuse flavor.
- Cook the steak bites: Heat a skillet over medium-high heat and melt the butter. Add the seasoned steak bites and sear for 2–3 minutes on each side until beautifully browned and cooked to your preferred level of doneness. Remove from heat and set aside.
- Fluff the potatoes: Once the potatoes are done, make a slit down the center of each potato and gently fluff the inside with a fork to create a soft base for the toppings.
- Add cheese and melt: Top each potato with shredded cheddar cheese and return them to the oven for 2–3 minutes to melt the cheese thoroughly.
- Assemble the loaded potatoes: Remove the potatoes from the oven. Generously top each with the cooked steak bites, a dollop of sour cream, crumbled bacon, and sliced green onions.
- Serve: Serve the loaded baked potatoes hot for a deliciously filling meal.
Notes
- For a spicier twist, add a dash of hot sauce or substitute pepper jack cheese instead of cheddar.
- You can swap sour cream for Greek yogurt as a lighter topping alternative.
