Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides to make it easier to lift the bars out later.
  2. Make the Crust: In a medium bowl, combine the graham cracker crumbs, ¼ cup granulated sugar, and melted butter. Mix until the mixture resembles wet sand. Press firmly and evenly into the bottom of the prepared pan to form the crust. Bake for 8–10 minutes until set and fragrant, then allow it to cool slightly.
  3. Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese together with ½ cup sugar until the mixture is smooth and creamy. Add the eggs one at a time, beating well after each addition to fully incorporate.
  4. Add Flavorings: Stir in the sour cream, key lime juice, key lime zest, and vanilla extract until everything is thoroughly combined and creamy.
  5. Assemble and Bake: Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake in the preheated oven for 30–35 minutes, or until the center is set but still slightly jiggly when you gently shake the pan.
