  • 1 3/4 cups almond flour
  • 2 tablespoons coconut flour
  • 1/4 cup powdered erythritol
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 34 tablespoons cold water

Filling and Glaze:

  • 1/4 cup sugar-free jam or preserves (raspberry, strawberry, or your choice)
  • Optional glaze: 2 tablespoons powdered erythritol, 1–2 teaspoons unsweetened almond milk, 1/4 teaspoon vanilla extract


Instructions

  1. Preheat the oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the dough: Combine dry ingredients, add butter, then mix in wet ingredients to form a dough. Roll out, cut into rectangles, and assemble with jam.
  3. Bake: Bake for 15–18 minutes until golden brown. Let cool.
  4. Glaze: Whisk together glaze ingredients and drizzle over cooled pop tarts.
