- 1/4 cup powdered erythritol

- 1/4 teaspoon xanthan gum
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, chilled and cubed
- 1 large egg
- 1/2 teaspoon vanilla extract
- 3–4 tablespoons cold water
Filling and Glaze:
- 1/4 cup sugar-free jam or preserves (raspberry, strawberry, or your choice)
- Optional glaze: 2 tablespoons powdered erythritol, 1–2 teaspoons unsweetened almond milk, 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the dough: Combine dry ingredients, add butter, then mix in wet ingredients to form a dough. Roll out, cut into rectangles, and assemble with jam.
- Bake: Bake for 15–18 minutes until golden brown. Let cool.
- Glaze: Whisk together glaze ingredients and drizzle over cooled pop tarts.
