Instructions

  1. Prepare the Marinade: In a large bowl, whisk together the hoisin sauce, honey, soy sauce, oyster sauce, Shaoxing wine, brown sugar, sesame oil, five-spice powder, minced garlic, grated ginger, and red food coloring if using to create a flavorful marinade.
  2. Marinate the Chicken: Add the boneless, skinless chicken thighs to the marinade and toss until they are fully coated. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the flavors to infuse deeply.
  3. Preheat the Oven and Prepare Baking Tray: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top to elevate the chicken, allowing excess marinade to drip off during roasting.
  4. Arrange and Roast the Chicken: Place the marinated chicken thighs on the wire rack in a single layer. Roast in the oven for 20 minutes to begin cooking and caramelizing the glaze.
