- 1 1/2 cups Shredded Cheddar Cheese, divided
Instructions
- Preheat the Oven: Preheat the oven to 350°F (180°C) to ensure it reaches the right temperature for baking the poppers evenly.
- Prepare the Jalapeños: Carefully slice each jalapeño pepper down the center and remove all seeds and veins to reduce the heat and create space for the filling. Set the prepared peppers aside.
- Make the Cornbread Batter: In a medium bowl, prepare the cornbread mix according to the instructions on the box. Fold in the canned corn and 1 cup of shredded cheddar cheese until well combined.
- Stuff the Peppers: Fill each jalapeño half with the cornbread batter, being careful not to overfill to avoid spilling during baking.
- Add Cheese Topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly on top of the stuffed peppers.
