Ingredients
Scale
Main Ingredients
- 8 slices Monterey Jack cheese (about 200g total)
- 1 lb (450g) shaved beef steak
- 1 tablespoon avocado oil
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 small yellow onion, thinly sliced
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
Optional
- Creamy cheese sauce or your favorite keto dip for serving
Instructions
- Sauté the vegetables: In a skillet over medium heat, heat the avocado oil. Add the thinly sliced onions and bell peppers. Sauté for 5 to 7 minutes until the vegetables are tender and slightly caramelized. Remove from the pan and set aside.
- Cook the beef: In the same skillet, add the shaved beef steak. Season with garlic powder, onion powder, salt, and black pepper. Cook for 4 to 5 minutes, stirring frequently, until the beef is browned and cooked through. Mix the beef with the sautéed vegetables and set aside.
- Melt the cheese: Line a large board or tray with parchment paper. In a clean non-stick skillet, place 4 slices of Monterey Jack cheese spaced apart. Heat on low-medium until the cheese melts and the edges bubble slightly, approximately 2 to 3 minutes.
- Assemble the roll ups: Spoon a few tablespoons of the beef and vegetable mixture into the center of each melted cheese slice. Using a spatula, gently lift and roll each cheese slice around the filling. Let them cool slightly, seam-side down, so they hold their shape.
- Serve warm: Serve the roll ups warm with a creamy cheese sauce or your preferred keto dip if desired. These are best enjoyed fresh and hot from the skillet.
Notes
- Use high-quality shaved beef steak for the best texture and flavor.
- Adjust seasoning according to your taste preference.
- The cheese acts as a wrap, so avoid overfilling to prevent tearing during rolling.
- These roll ups are best consumed immediately for optimal texture.
- To make thinner roll ups, you can use smaller portions of cheese and beef mixture.
