For the chicken:
- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For the hot honey sauce:
- 2 tablespoons butter
- 2 tablespoons honey
- 1 tablespoon hot sauce (such as Frank’s RedHot)
For serving:
- 1 cup cooked jasmine or basmati rice
- 1 cup steamed broccoli florets
- 1/2 cup shredded carrots
- 1/2 avocado, sliced
- 2 tablespoons chopped green onions
- Sesame seeds for garnish (optional)
Instructions
- Prepare the chicken: In a bowl, coat chicken with olive oil, smoked paprika, garlic powder, salt, and pepper. Cook in a skillet until golden and cooked through.
- Make the hot honey sauce: Melt butter, add honey and hot sauce. Pour over cooked chicken.
- Assemble the bowls: Divide rice into bowls, top with chicken, broccoli, carrots, avocado, green onions. Garnish with sesame seeds.
