Ingredients
Scale
Ingredients
- 1 cup pecan halves
- 1/2 cup soft caramel candies (about 20)
- 1 tablespoon heavy cream
- 3/4 cup semi-sweet or dark chocolate chips
- 1 teaspoon coconut oil or vegetable oil
- Flaky sea salt for topping (optional)
Instructions
- Prepare the baking sheet: Line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Arrange pecans: Place pecan halves in clusters of 3–4 on the parchment paper, shaping them like a turtle’s head and legs for a classic look.
- Melt caramel: In a microwave-safe bowl, combine soft caramel candies and heavy cream. Microwave in 20-second increments, stirring between each, until the caramel is completely melted and smooth.
- Assemble caramel clusters: Spoon about 1 teaspoon of the melted caramel onto the center of each pecan cluster, allowing it to spread slightly and bind the nuts together. Let the caramel cool and set for 10–15 minutes to firm up.
- Melt chocolate: In a separate bowl, melt the chocolate chips with the coconut or vegetable oil by microwaving in 30-second bursts, stirring until smooth and glossy.
- Coat caramel clusters: Spoon the melted chocolate over each caramel-covered pecan cluster, spreading gently to fully cover the caramel and nuts.
- Optional topping: Sprinkle flaky sea salt over the chocolate-topped turtles to enhance flavor with a subtle saltiness.
- Chill to set: Place the baking sheet in the refrigerator for 20–30 minutes or until the chocolate is completely set and firm.
Notes
- For deeper flavor, lightly toast the pecan halves before assembling the turtles.
- Store these candies in an airtight container at room temperature or in the fridge for up to 2 weeks to maintain freshness.
