Description

Sauce:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small yellow onion, finely chopped
  • 1 carrot, peeled and finely chopped
  • 1 celery stalk, finely chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef (or a mix of beef and pork)
  • 1/4 cup tomato paste
  • 1/2 cup dry white wine
  • 1 cup whole milk
  • 1 (28 oz) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Additional:

  • 12 oz gigli pasta
  • Grated Parmesan and fresh basil for serving

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil and butter. Sauté onion, carrot, and celery until softened. Add garlic and cook briefly.
  2. Cook Meat: Add ground beef, brown it, then stir in tomato paste and cook.
  3. Deglaze and Simmer: Deglaze with white wine, then add milk, crushed tomatoes, and seasonings. Simmer until flavors meld.
  4. Prepare Pasta: Cook gigli pasta until al dente, then toss with the Bolognese sauce.
  5. Serve: Top with Parmesan and fresh basil before serving.

Notes

  • Simmer sauce longer for richer flavor or make ahead. Freezes well for up to 3 months.
  • Substitute gigli pasta with pappardelle or rigatoni.
