Sauce:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small yellow onion, finely chopped
- 1 carrot, peeled and finely chopped
- 1 celery stalk, finely chopped
- 2 cloves garlic, minced
- 1 lb ground beef (or a mix of beef and pork)
- 1/4 cup tomato paste
- 1/2 cup dry white wine
- 1 cup whole milk
- 1 (28 oz) can crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Additional:
- 12 oz gigli pasta
- Grated Parmesan and fresh basil for serving
Instructions
- Sauté Aromatics: In a large pot, heat olive oil and butter. Sauté onion, carrot, and celery until softened. Add garlic and cook briefly.
- Cook Meat: Add ground beef, brown it, then stir in tomato paste and cook.
- Deglaze and Simmer: Deglaze with white wine, then add milk, crushed tomatoes, and seasonings. Simmer until flavors meld.
- Prepare Pasta: Cook gigli pasta until al dente, then toss with the Bolognese sauce.
- Serve: Top with Parmesan and fresh basil before serving.
Notes
- Simmer sauce longer for richer flavor or make ahead. Freezes well for up to 3 months.
- Substitute gigli pasta with pappardelle or rigatoni.
