Description

  • 1 zucchini, sliced into thick rounds

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, dried oregano, salt, and black pepper to create a flavorful marinade.
  2. Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, tossing well to coat each piece. Cover the bowl and refrigerate for 20 to 30 minutes to let the flavors infuse into the shrimp.
  3. Preheat the Grill: While the shrimp marinates, preheat your grill or grill pan over medium-high heat to achieve that perfect char and grill marks.
  4. Assemble Kebabs: Thread shrimp alternately with the prepared chunks of red and yellow bell peppers, red onion wedges, and thick zucchini slices onto metal or soaked wooden skewers, combining colors and textures for even cooking.
