Description

These Greek-style chicken gyros with homemade tzatziki are a crowd-pleaser. Tender marinated chicken wrapped in warm pita bread with flavorful tzatziki and fresh veggies make for a delicious and satisfying meal.

For the Chicken:

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic (minced)
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Tzatziki:

  • 1 cup plain Greek yogurt
  • 1/2 cup finely grated cucumber (squeezed dry)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon white vinegar
  • 1 clove garlic (minced)
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

To Serve:

  • 4–6 warm pita breads
  • Sliced tomatoes
  • Thinly sliced red onions
  • Shredded lettuce or baby spinach
  • Crumbled feta cheese (optional)

Instructions

  1. Marinate the Chicken: Combine olive oil, lemon juice, garlic, red wine vinegar, oregano, cumin, paprika, salt, and pepper in a bowl. Add chicken, coat well, cover, and refrigerate for at least 1 hour.
  2. Prepare the Tzatziki: Mix together yogurt, cucumber, olive oil, lemon juice, vinegar, garlic, dill, salt, and pepper. Chill until serving.
  3. Cook the Chicken: Grill or cook chicken in a skillet until golden and cooked through. Rest, then slice into strips.
  4. Assemble the Gyros: Warm pita, layer with chicken, tomatoes, onions, greens, and tzatziki. Top with feta if desired. Serve immediately.

Notes

  • Both chicken and tzatziki can be made a day ahead for convenience.
