These Greek-style chicken gyros with homemade tzatziki are a crowd-pleaser. Tender marinated chicken wrapped in warm pita bread with flavorful tzatziki and fresh veggies make for a delicious and satisfying meal.

For the Chicken:
- 1 1/2 pounds boneless, skinless chicken thighs
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 3 cloves garlic (minced)
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Tzatziki:
- 1 cup plain Greek yogurt
- 1/2 cup finely grated cucumber (squeezed dry)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon white vinegar
- 1 clove garlic (minced)
- 1 tablespoon chopped fresh dill
- Salt and pepper to taste
To Serve:
- 4–6 warm pita breads
- Sliced tomatoes
- Thinly sliced red onions
- Shredded lettuce or baby spinach
- Crumbled feta cheese (optional)
Instructions
- Marinate the Chicken: Combine olive oil, lemon juice, garlic, red wine vinegar, oregano, cumin, paprika, salt, and pepper in a bowl. Add chicken, coat well, cover, and refrigerate for at least 1 hour.
- Prepare the Tzatziki: Mix together yogurt, cucumber, olive oil, lemon juice, vinegar, garlic, dill, salt, and pepper. Chill until serving.
- Cook the Chicken: Grill or cook chicken in a skillet until golden and cooked through. Rest, then slice into strips.
- Assemble the Gyros: Warm pita, layer with chicken, tomatoes, onions, greens, and tzatziki. Top with feta if desired. Serve immediately.
Notes
- Both chicken and tzatziki can be made a day ahead for convenience.
- Chicken breast can be used instead of thighs.
- Gyros can be served as bowls over rice or salad.
