For the Stuffed Peppers:

  • 4 large bell peppers (any color)
  • 1 lb ground lamb or beef
  • 1 tablespoon olive oil
  • 1 small red onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 cup cooked white rice or quinoa
  • ½ cup crumbled feta cheese
  • ¼ cup chopped kalamata olives
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • ½ cup grated cucumber (squeezed dry)
  • 1 clove garlic (minced)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the peppers: Cut the tops off the bell peppers, remove the seeds and membranes, and lightly season the inside with salt. Place in a baking dish.
  3. Cook the filling: In a skillet, heat olive oil, sauté onion, garlic, oregano, cumin, then add and cook the ground lamb/beef. Drain excess fat. Stir in cooked rice, feta, olives, parsley, salt, and pepper.
  4. Fill the peppers: Spoon the filling into each pepper. Cover with foil and bake for 30–35 minutes until peppers are tender.
  5. Make the tzatziki: Combine all sauce ingredients, chill until serving.
  6. Serve: Top warm stuffed peppers with tzatziki sauce.

  • Peppers can be prepped ahead and baked before serving.
  • Use ground turkey or chicken for a lighter option.
