Description

Golumpki Soup is a comforting Polish-inspired soup that captures the flavors of traditional stuffed cabbage rolls in a hearty, easy-to-make bowl. This rich soup combines ground beef and pork, tender cabbage, and rice simmered in a savory tomato and beef broth seasoned with thyme, paprika, and Worcestershire sauce. Perfect for a cozy family dinner, it’s filling and flavorful, garnished with fresh parsley for a vibrant finish.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 small head green cabbage, chopped

Liquids and Sauces

  • 1 (15-ounce) can tomato sauce
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce

Dry Ingredients and Seasonings

  • 1/2 cup uncooked white rice
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon brown sugar (optional)

Garnish

  • Chopped fresh parsley


Instructions

  1. Brown the Meat: Heat olive oil in a large pot over medium heat. Add the ground beef and ground pork, cooking until browned. Drain excess fat to prevent greasiness.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the pot and sauté for 2–3 minutes until softened and fragrant.
  3. Cook the Cabbage: Stir in the chopped cabbage and cook for another 5 minutes, stirring occasionally until it slightly softens.
  4. Add Liquids and Seasonings: Pour in the tomato sauce, crushed tomatoes, and beef broth. Stir in the uncooked rice, Worcestershire sauce, dried thyme, paprika, salt, black pepper, and optional brown sugar. Mix everything well to combine the flavors evenly.
  5. Simmer the Soup: Bring the soup to a boil, then reduce heat to low and cover the pot. Let it simmer gently for 30–40 minutes, stirring occasionally until the rice is tender and the cabbage is fully cooked.
  6. Adjust and Garnish: Taste the soup and adjust seasoning as needed. Ladle into bowls and garnish with freshly chopped parsley before serving.

  • For a lower-carb alternative, substitute the uncooked white rice with cauliflower rice.
  • This soup freezes well; store in airtight containers for up to 3 months.
  • Ground turkey or all ground beef can be used instead of the beef and pork combination.
