Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Caramelize the Apples: In a skillet set over medium heat, melt the unsalted butter. Add the thinly sliced apples, light brown sugar, fresh thyme leaves, ground cinnamon, and a pinch of salt. Cook the mixture for 6 to 8 minutes, stirring occasionally, until the apples are soft and caramelized, releasing their natural sweetness. Remove from heat and let cool slightly.
  3. Assemble the Brie and Apples: Place the thawed puff pastry sheet on the prepared baking sheet. Spoon a few tablespoons of the caramelized apple mixture onto the center of the pastry. Place the whole Brie wheel right on top of the apples, then pile the remaining apples over the top of the Brie.
  4. Wrap the Brie in Puff Pastry: Carefully fold the edges of the puff pastry up and over the Brie and apples, trimming any excess pastry if necessary. Pinch the edges together firmly to seal the Brie completely inside the pastry pocket.
