Description

Delight in these Gingerbread Latte Cookies, a perfect fusion of classic gingerbread spices and the rich flavor of coffee. Soft and chewy with a luscious espresso glaze, these cookies are ideal for cozy gatherings or a special treat during the holidays.

Ingredients

Scale

Cookies

  • ¾ cup unsalted butter, softened
  • ½ cup brown sugar
  • â…“ cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • ½ tsp ground cloves
  • ¼ tsp nutmeg
  • ¼ tsp salt

Coffee Glaze

  • 1 cup powdered sugar
  • 1½ tbsp brewed espresso or strong coffee
  • ½ tsp vanilla extract
  • Pinch of cinnamon (plus more for topping)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking the cookies.
  2. Cream Ingredients: In a large mixing bowl, cream together the unsalted butter and brown sugar until fluffy. Then add the molasses, egg, and vanilla extract, mixing well to combine.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, ground ginger, cinnamon, ground cloves, nutmeg, and salt to evenly distribute the spices.
  4. Combine Dough: Gradually add the dry ingredient mixture to the wet ingredients, stirring until a soft dough forms without overmixing.
  5. Shape Cookies: Scoop the dough into 1-inch balls and place them onto the prepared baking sheet. Slightly flatten each ball to help them bake evenly.
  6. Bake Cookies: Bake in the preheated oven for 8 to 10 minutes or until the edges are set. Remove from oven and allow to cool completely on a wire rack.
  7. Prepare Glaze: In a small bowl, whisk together powdered sugar, brewed espresso or strong coffee, vanilla extract, and a pinch of cinnamon until smooth and pourable.
  8. Glaze Cookies: Drizzle or spread the coffee glaze over the cooled cookies and finish by sprinkling with additional cinnamon for extra flavor and decoration.

Notes

  • Ensure cookies are fully cooled before glazing to prevent the glaze from melting or sliding off.
  • For a stronger coffee flavor, use espresso instead of regular brewed coffee.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Molasses sweetens and adds richness, but dark corn syrup can be substituted if needed.
