Ingredients
Scale
Potatoes
- 5 medium-sized potatoes, cubed
- 2 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- Paprika, to taste
Chicken
- 1 lb chicken breasts, cubed
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 2 tbsp minced garlic
- Buffalo Wild Wings Garlic Parmesan Sauce, enough to cover the chicken
Finishing
- 1 cup shredded mozzarella cheese
Instructions
- Prepare the Potatoes: Wash and cube the potatoes. Spray the crockpot with cooking spray to prevent sticking. Add the cubed potatoes to the crockpot and drizzle with olive oil. Season with salt, black pepper, garlic powder, and paprika. Stir well to evenly coat the potatoes with the seasonings.
- Season the Chicken: Cube the chicken breasts and place them in a bowl. Season with salt, black pepper, paprika, onion powder, and Italian seasoning. Add the minced garlic and mix thoroughly. Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat all pieces evenly.
- Cook in the Crockpot: Add the seasoned chicken with sauce on top of the potatoes in the crockpot. Cover and cook on low for about 6 hours, or until the potatoes are tender and the chicken is fully cooked through. Stir occasionally if possible to blend the flavors.
- Add Cheese: Once cooked, sprinkle the shredded mozzarella cheese evenly over the top of the chicken and potatoes. Cover the crockpot again and let the cheese melt for 5-10 minutes before serving.
- Serve: Serve the Garlic Parmesan Chicken and Potatoes hot. For extra flavor, optionally top with ranch dressing before serving.
Notes
- Ensure the chicken is fully cooked before serving by checking that it reaches an internal temperature of 165°F (74°C).
- For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
- If Buffalo Wild Wings Garlic Parmesan Sauce is unavailable, substitute with any good quality garlic parmesan wing sauce or make your own.
- Stirring occasionally during cooking enhances flavor distribution but is optional.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
