  • 4 slices sourdough or hearty sandwich bread
  • 1 cup shredded mozzarella cheese

Instructions

  1. Sauté Mushrooms: In a skillet over medium heat, melt 1 tablespoon of butter with olive oil. Add the sliced mushrooms and cook for about 6–8 minutes until they are browned and their moisture has evaporated, stirring occasionally to ensure even cooking.
  2. Add Garlic and Seasonings: Stir in the minced garlic, salt, black pepper, and dried thyme if using. Cook for another 1–2 minutes until fragrant, then remove from heat and set aside.
  3. Prepare Cheese Mixture: In a small bowl, combine the shredded mozzarella and cheddar cheese until evenly mixed.
  4. Assemble Sandwiches: Lay out the bread slices. Evenly divide the cheese mixture between two slices. Top the cheese layers with the sautéed garlic mushrooms. Place the remaining bread slices on top to complete the sandwiches.
  5. Butter the Bread: Spread mayonnaise or softened butter on the outside of each sandwich to help create a crispy, golden crust when grilled.
